Embrace the earth

It is the time of year when we seek to put thought into action. Our minds have manifested, intended, created all winter, and now we hope to see our thoughts take form.

You must not be frustrated when you are set back. You cannot be unwilling to change your plans as they start to unfold in physical form. Like the plants that are now coming to fruition, you must bring your potential to place here on this earth. Root down so that you may rise up. And many seeds are planted, many buds rise up, but only the most beautiful, resilient, and well-founded seeds can blossom.

Recipe of the Week

Three Seed Pancakes – makes 12 medallions

  • 1 C raw pumpkin seeds
  • 1-2 T anise seeds
  • 2 T flax seeds
  • 1 T oil
  • 1 C warm water
  • ¼ t salt
  • ¼ C starch (arrowroot or tapioca)

Whisk seeds together and grind ½ cup at a time in small blender. To the last ½ cup of the seeds, add oil, water (minus 2 T), and salt. Pulse until it forms a mealy consistency; pour it in the with other ground seeds.

Use extra water to rinse blender, pour into mix and stir.

Let mix stand 10 minutes to 10 hours. Spoon half dollar sized circles onto hot griddle (I butter my grill for flavor, but they won’t stick to a Teflon griddle). Let them become golden and crispy on both sides, about 6 minutes for the first and 3 for the second.

Ambiance: Iowa City coffee house meets North African cafe.

Experience: Buffet and menu selections available at all times. Your food is fresh, and you are attended to throughout your visit. Tea and coffee are served in silver hand press.

When you take time to visit Iowa City and are hungry for a taste of North Africa, head to Nile Valley. Many vegetarian options are on the buffet at all times, and more are available to order off of the menu (which has pictures for those culinarily challenged). The staff watches your choices off of the buffet, and start making more fresh while you begin your meal. For the ecologically faint of heart, the restaurant does use only foam plates and plastic utensils; somehow I can look past it when enjoying the nutritious food.

Arrive to try the falafel. They are made in the shape of mini donuts, and fabulous with the hummus. Every soup of the day I have taste is warming, tasty, and makes your mouth feel alive. And they make fresh juices! I was knocked over by the limeade. If you decide on the buffet, try to save room for dessert; they are all delicious. The food is healthy and priced for all to afford; where else can you pay less and feel better?

This locally-owned restaurant is spacious, loving, and very affordable. For a lingering lunch with tea and conversation, or for a quick bite off of the buffet, Nile Valley is a great place eat in Iowa City.
